Lake George Elementary School students had an opportunity to sample sweet potato hummus thanks to Chef Jeff and Cornell Cooperative Extension's Farm to School Harvest of the Month Program. Sweet potatoes were the vegetable of the month at LGCSD.
Sweet potatoes provide fiber and potassium. They are also high in vitamins A, B6, and C. Sweet potatoes have received more attention as a crop in the past few years due to their health benefits. Acreage grown is not typically recorded, but is estimated at about 200 acres in NYS.
The majority of LGES students gave the sweet potato hummus a thumbs up!
